Head Barman | JHB | Restaurant Group
An established and rapidly expanding upmarket restaurant group with venues in Bryanston and Parkhurst is seeking an experienced and dynamic HEAD BARMEN to lead its bar operations across high‑volume, premium dining environments.
About the Role
As Head Barman, you will take full ownership of bar performance, guest experience, beverage quality, and team leadership. You will work closely with the Group Beverage Manager and Restaurant Managers to maintain exceptional standards while driving innovation and consistency across all outlets.
Key Responsibilities
- Bar leadership – Oversee day‑to‑day bar operations, ensuring smooth service and premium guest experience.
- Cocktail development – Create, refine, and maintain a modern, high‑quality cocktail menu aligned with the group’s brand.
- Stock control – Manage ordering, stock rotation, GP targets, and supplier relationships.
- Team training – Train, mentor, and motivate bartenders to deliver consistent excellence.
- Service standards – Uphold strict hygiene, presentation, and service protocols.
- Guest engagement – Build rapport with guests and ensure a personalised, memorable bar experience.
Requirements
- Minimum 3 – 5 years’ experience as Senior Barman or Head Barman in an upmarket or high‑volume environment.
- Strong cocktail knowledge and passion for mixology.
- Excellent leadership, communication, and training ability.
- Solid understanding of GP management, stock systems, and supplier coordination.
- Professional, well‑presented, and service‑driven.
