The successful candidate will play a central role in shaping the hotel’s food and beverage identity, creating memorable guest experiences, and establishing an efficient, commercially successful department.
The Role of F&B Manager
As F&B Manager, you will take ownership of the department’s pre-opening preparations and daily operational performance. You will work closely with the culinary leadership team, suppliers, vendors, and other hotel departments to ensure that every aspect of the food and beverage offering is ready for a successful opening.
Following the launch, you will oversee all hotel food and beverage outlets, including the restaurant, bar and lounge, and room service. You will be responsible for maintaining excellent service standards, managing costs, growing revenue, developing employees, and ensuring that the guest experience consistently reflects the character and quality of a luxury boutique hotel.
F&B Manager – Key Responsibilities
Pre-Opening Execution
- You will lead the preparation and implementation of the food and beverage department’s operational framework. This will include establishing clear Standard Operating Procedures, service sequences, departmental policies, opening and closing procedures, and effective inventory controls.
- You will recruit, onboard, train, and motivate a high-performing front-of-house team.
- Coordinating with executive chefs, local suppliers, beverage partners, and relevant vendors.
- Operational readiness checks, assist with trial services, and identify any gaps that could affect service delivery. Your ability to remain organised and solution-focused during the pre-opening period will be essential.
Operational Leadership
- Oversee daily food and beverage operations across the restaurant, bar and lounge, and room service offering. You will ensure that each outlet runs efficiently while maintaining a consistent level of quality and attention to detail.
- Support the team, engaging with guests, resolving concerns, and monitoring service delivery. The position requires a manager who is comfortable being present on the floor and leading by example.
- Deliver exceptional, personalised service that reflects a luxury boutique ethos. You will encourage the team to anticipate guest needs, provide thoughtful recommendations, and create experiences that feel genuine rather than scripted.
- Collaborate closely with the culinary team to maintain strong communication between front-of-house and back-of-house operations. Contribute to menu launches, special events, promotions, beverage activations, and opportunities to enhance the hotel’s dining experience.
Team Leadership and Development
- You will create a positive, professional, and accountable working environment. This will include setting clear performance expectations, conducting regular briefings, providing ongoing coaching, and addressing operational or performance concerns promptly.
- You will be responsible for preparing staff schedules that support business requirements while maintaining appropriate productivity levels.

Financial and Cost Management
- You will take responsibility for driving revenue and managing the department in line with approved financial targets. This will include managing departmental budgets, monitoring daily and monthly performance, and identifying practical opportunities to improve revenue.
- You will control food and beverage costs, monitor wastage, oversee stock movement, and conduct regular stock audits. You will work with relevant stakeholders to maintain accurate purchasing, receiving, storage, and issuing procedures.
- Strong financial awareness is essential. You should be comfortable working with point-of-sale systems, stock management platforms, pricing, menu costing, forecasting, and operational reporting.
- You will analyse performance and make informed recommendations regarding pricing, promotions, beverage mix, staffing, purchasing, and other factors that influence profitability.
Quality, Safety, and Compliance
- You will maintain uncompromising standards of food hygiene, cleanliness, health and safety, and local licensing compliance.
- You will conduct regular inspections, ensure accurate records are maintained, and address any risks or compliance concerns without delay.
F&B Manager – Candidate Profile
- Minimum of three to five years of food and beverage management experience gained within a four-star or five-star boutique hotel, luxury hospitality environment, or high-end dining establishment.
- Previous experience with a new hotel, restaurant opening, or departmental setup will be highly advantageous. You should be able to demonstrate your involvement in creating operating standards, recruiting and training teams, preparing outlets for launch, or implementing new systems.
- You will need strong financial acumen, including practical knowledge of point-of-sale systems, stock management, cost control, budgeting, menu costing, and operational reporting.
- Excellent leadership, communication, and guest relations skills are essential. You should be comfortable managing a diverse team, collaborating with senior leaders, communicating with suppliers, and engaging confidently with local and international guests.
- The right person will be flexible, hands-on, detail-orientated, commercially aware, and calm under pressure. You should be able to manage competing priorities while maintaining focus, professionalism, and a consistently high standard of execution.
- A diploma or degree in Hospitality Management, Food and Beverage Management, or a related field is preferred.
