We are seeking a dynamic BAR MANAGER with advanced mixology skills to lead operations, elevate guest experience, and drive beverage innovation at a premium casual dining venue in Cape Town.

Our client is an expanding hospitality group from Johannesburg, with its first flagship restaurant coming to Cape Town’s Moullie Point.

Bar Manager Role Overview

This is a leadership opportunity within one of Cape Town’s most exciting dining concepts, combining relaxed sophistication with world-class service. As the Bar Manager, you will oversee all aspects of bar operations—from crafting signature cocktails to managing inventory and mentoring a talented team of bartenders. You will be the creative force behind the beverage program, ensuring every drink served reflects the venue’s commitment to quality, style, and guest satisfaction.

Your role will blend artistry with strategy: balancing hands-on mixology with operational leadership. You will collaborate closely with the restaurant management team to maintain smooth service flow, optimize profitability, and uphold the brand’s premium standards.

Bar Manager’s Key Responsibilities
  • Mixology & Beverage Innovation: Design and refine cocktail menus, introduce seasonal specials, and ensure consistency in presentation and flavor.
  • Guest Experience: Engage with guests, recommend pairings, and create memorable bar interactions that reflect premium hospitality.
  • Team Leadership: Recruit, train, and motivate bartenders and barbacks. Foster a culture of creativity, professionalism, and teamwork.
  • Operational Management: Oversee daily bar operations, including setup, service flow, and closing procedures. Maintain compliance with hygiene and safety standards.
  • Inventory & Cost Control: Manage stock levels, supplier relationships, and ordering processes. Monitor beverage margins and minimize wastage.
  • Financial Performance: Support budgeting, analyze P&L reports, and implement strategies to maximize profitability.
  • Training & Development: Conduct ongoing training in mixology, product knowledge, and guest engagement.
  • Brand Representation: Uphold the venue’s image through impeccable grooming, presentation, and service standards.
Candidate Profile
  • Experience: Minimum 3–5 years of bar management experience in premium casual or fine-dining environments.
  • Mixology Expertise: Proven ability to craft and innovate cocktails using modern techniques and premium ingredients.
  • Leadership Style: Hands-on, energetic, and inspiring leader who thrives in fast-paced service.
  • Skills: Strong understanding of beverage trends, POS systems, and cost control. Excellent communication and organizational skills.
  • Attributes: Detail-oriented, creative, and composed under pressure.
  • Flexibility: Willingness to work evenings, weekends, and public holidays.
