General Manager | Cape Town | Flagship Restaurant

We are seeking a visionary, high-energy GENERAL MANAGER to spearhead the pre-opening phase and lead the ongoing operations of the flagship restaurant and all hotel-contracted food and beverage events.

Our client is bringing a fresh, sophisticated energy to the Atlantic Seaboard. Nestled in the vibrant heart of Mouille Point, this brand-new boutique hotel development is preparing to open its doors. At the center of this premium property is the signature restaurant, designed to become a destination of choice for both local culinary enthusiasts and international travelers.

The Role

As the General Manager, you will hold the keys to the entire F&B footprint of the property. This is a dual-focus role requiring a rare blend of sharp restaurant operational acumen and exceptional event execution. You will establish the service culture, drive profitability, and ensure that every guest experience—from a casual breakfast to a high-end contracted event—is flawless.

Key Responsibilities
  • Pre-Opening & Launch: Partner with executive leadership and the culinary team to establish operational workflows, source suppliers, implement POS/inventory systems, and drive the opening countdown.
  • Team Leadership: Recruit, train, inspire, and retain a world-class front-of-house service team. Foster a culture of excellence, hospitality, and continuous development.
  • Restaurant Operations: Oversee day-to-day restaurant service, ensuring impeccable standards of hospitality, floor management, and guest satisfaction.
  • Event & Banquet Management: Seamlessly coordinate and execute all hotel-contracted events, conferences, and private functions, managing logistics, setup, and premium service delivery.
  • Financial & Administrative Stewardship: Manage labor costs, beverage margins, and operational budgets. Analyze P&L performance and drive strategies to maximize revenue and profitability.
  • Brand & Quality Control: Maintain strict adherence to local health, safety, and liquor regulations while ensuring the aesthetic and experiential integrity of the brand is consistently upheld.
Experience & Requirements
  • Proven Leadership: A minimum of 4–5 years of senior management experience (General Manager or strong Assistant GM) in a high-volume, premium restaurant or a luxury boutique hotel F&B environment.
  • Pre-Opening Track Record: Direct experience with restaurant or hotel openings is highly advantageous.
  • Event Acumen: Strong operational knowledge of banqueting, conferencing, and private event execution.
  • Financial Savvy: Excellent business acumen with a deep understanding of cost controls, stock management, and hospitality KPIs.
  • Communication Skills: Exceptional interpersonal skills; ability to communicate effortlessly with corporate clients, hotel guests, and internal culinary teams.
  • Flexibility: Willingness to work hospitality hours, including weekends, evenings, and public holidays, to ensure operational success.
