Breakfast Head Chef | Cape Town | Boutique Hotel & Restaurant
We’re seeking a highly skilled and disciplined BREAKFAST HEAD CHEF to lead the breakfast service at a new boutique hotel opening in Mouille Point, Cape Town. The property will feature a refined restaurant concept, offering contemporary cuisine with Mediterranean and South African influences, designed to deliver a premium dining experience to both hotel guests and external patrons.
The ideal candidate will bring technical mastery, reliability, and creativity, with proven ability in modern breakfast service, artisanal bakery, and healthy, innovative plating. Strong leadership, consistency, and operational clarity are essential, alongside the ability to collaborate with the wider culinary team to ensure seamless integration with the restaurant’s fine-dining standards.
Experience & Qualifications
- Breakfast expertise in hot and cold service, artisanal breads, and plated dishes
- Bakery and pastry skills for viennoiserie, laminated doughs, and signature breakfast pastries
- Healthy cuisine knowledge including plant-forward options, smoothie bowls, and wellness-focused menus
- Menu development tailored to boutique hotel guests and restaurant clientele
- Premium dining background preferred, with strong presentation and culinary discipline
- Ability to lead a breakfast brigade, manage production schedules, and uphold international standards
Key Responsibilities
- Menu design: Develop seasonal breakfast menus aligned with the restaurant’s Mediterranean-South African concept
- Team leadership: Train, mentor, and supervise breakfast staff to ensure consistency and excellence
- Quality control: Maintain high standards in taste, presentation, and hygiene across all breakfast offerings
- Collaboration: Work closely with the Executive Chef and restaurant team to align breakfast service with overall dining concepts
- Production management: Oversee daily schedules, inventory, and cost control for breakfast operations
- Innovation: Introduce modern techniques, creative plating, and signature breakfast dishes to elevate guest experience
- Guest engagement: Ensure breakfast service reflects the boutique hotel’s luxury positioning and enhances guest satisfaction
Salary Package
- R20 – 25 000, depending on experience and skills – no additional benefits
